Food allergies


As everyone suffering from food allergies knows, going to the restaurant with family, friends or colleagues is not always enjoyable: limited knowledge of the ingredients used in dishes, fear of cross-contamination, lack of confidence in the staff are some of the worries that can come with ordering a simple meal!

A food allergy cannot be taken lightly. Difficulty breathing, loss of consciousness, inflammation and vomiting are some of the extreme reactions that the immune system can have when confronted with a food protein. The consequences can be dramatic. Serious allergies can cause an anaphylactic shock, a violent reaction that can cause loss of consciousness and sometimes death.

Priority Allergens


Although there are many existing allergens, the following cause the majority of allergies:

1. Fish and seafood
2. Peanuts
3. Nuts
4. Sesame seeds
5. Milk
6. Soya
7. Eggs
8. Wheat or any grain containing gluten (barley, oat, rye and triticale)
9. Sulfites (food supplement)


At Zero8, as our name implies, 8 out of the 9 priority allergens have been banned from our kitchens. Found in wine, vinegar and naturally in many other foods, sulfites can not be a part of the Zero8 pledge. However, our menu offers many low-risk dishes identified with an S.

Gluten


Having a gluten-free diet is no small task! Gluten is a protein found in cereals such as different wheat types, kamut, rye, barley and possibly oat. It can be deceiving as it may also be found in modified starch, wheat dextrose or other supplements. Largely found in occidental food, it can also be found in numerous modified foods and in unusual, but less dangerous places like soap or lip balm! Hypersensitive people must therefore be very careful.

Hypersensitivity to gluten is hard to diagnose because it comes in many guises but has very serious repercussions on both the mind and body: migraines, fatigue, depression, eczema, celiac diseases and in the most serious case herpetiform dermatitis. There is ongoing research on numerous reports of the effect of gluten (and casein: milk protein) with autistic children.

Even though gluten is not yet officially considered a priority allergen, Zero8 offers a menu that is totally gluten-free, which also excludes milk and is casein-free. At last there is a place that caters to gluten intolerant people!

Sulfites


Sharing a bottle of wine amongst friends is a real treat. Some people, however, simply can not. Lightheartedness, bright eyes and laughs quickly give way to violent migraines, palpitations, intestinal problems and panic for sulfite allergic or intolerant people.

Sulfites are substances found in many natural foods such as raisins, lettuce, fish and so on. They are also used as preservatives in foods and beverages such as wines, certain fruit juices, vinegar, dried herbs and marinades.

Zero8 always looks for solutions that will satisfy more customers. In this case, despite the fact that they are considered one of the nine most common food allergens, it is impossible for us to guarantee a sulfite-free environment. However, Zero8 offers certain dishes on its menu that are identified with the S symbol. These dishes are low risk because no sulfites are used in their preparation, however cross-contamination remains possible if unlikely.

Intolerance


Intolerance or allergy? Several people confuse allergies and food intolerance since the symptoms can be similar; however the origin of the problem is different.

Food allergies are a reaction of the immune system to the consumption of a protein that would be harmless to others. In the case of food intolerance, it's generally the gastro-intestinal system that is affected by the consumption of food causing digestive problems. Reactions can occur within one hour, or sometimes several days after consumption. Since there is a correlation between priority allergens and intolerance of certain foods, many food intolerant clients will find a perfectly suitable cuisine at Zero8.

Therefore, since intolerance to dairy products (lactose) is among the most frequent food intolerance and since milk is one of the priority allergens, all our dishes are obviously free of lactose and casein (milk protein).

Other allergens


Since most food allergies are caused by the 9 priority allergens, you may be allergic to other foods. That is why we identify all of the ingredients in our dishes on our menu and that the list of our kitchen's authorized ingredients is available upon request at any time. Whenever possible, we try to accommodate our clients' requests in adapting dishes to their particular needs.

Sodium glutamate (MSG)


Sodium glutamate can be found naturally in a variety of foods. We do not add any to our dishes. Our dishes are flavored using spices and fresh herbs!
